Homemade Blueberry Muffin with Streusel Topping



Looking for an easy-to-eat sweet breakfast that can be grabbed on-the-go.


I made this blueberry muffin recipe with whole wheat flour, fresh blueberries, and no artificial ingredients. Just because they are healthy does not mean that they are dry or do not taste good. They are low-calories and wholesome, but they are also so moist and delicious.


There’s nothing better than blueberry muffins in the morning for breakfast or even a midday snack. Try this delicious streusel-topped recipe that will satisfy your hunger.

Ingredients


For Muffins:

2 cup(s) wheat flour

2 tsp baking powder

¼ tsp salt

½ tsp ground cinnamon

¾ cup almond milk

¼ cup vegetable oil

½ cup(s) granulated sugar

2 egg(s)

1 ½ tsp vanilla extract

1 tsp of lemon juice

1 and ½ cup blueberries


For Streusel:

¼ cup flour

¼ cup of brown sugar

3 tsp of unsalted-butter


Cooking Instructions

Preheat the oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups. In a medium mixing bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.


In a large bowl, beat milk, oil, vanilla, lemon juice, sugar and eggs until well blended. Fold the flour mixture into the wet ingredients and stir to combine with a wooden spoon or silicone spatula. Gently stir in blueberries.


Make the streusel topping, use a small bowl, combine the flour and brown sugar and stir to combine. Using your fingertips, work the butter into the dry ingredients. Divide batter evenly among muffin cups. Sprinkle each with about 2 teaspoons streusel topping.


Bake for about 15-18 minutes or until golden brown. Cool slightly before removing from the pan.
